Почему кубики мяса, нарезанные с помощью кубикореза для замороженного мяса, получаются разного размера?

Uneven meat cubes from frozen meat dicers mainly result from blade assembly, feeding system, raw material status and equipment assembly.

What Causes Uneven Size of Meat Cubes from Frozen Meat Dicer?(images 1)
  1. Worn, dull or improperly installed blades (most frequent cause) After long-term cutting of frozen meat, dull blades tear rather than cleanly cut muscle fibers, leading to linked and deformed cubes. Chipped blades, excessive grid gaps or loose mounting screws deform the cutting grid and cause inconsistent cube sizes. Incorrect assembly sequence of slicing, longitudinal and cross blades on 3D dicers also ruins cutting precision.
  2. Abnormal feeding and conveying system Slipping conveyor belts or unstable push rods lead to fluctuating feeding speed. Skewed meat blocks during feeding shift cutting positions. Mismatch between feeding speed and cutting speed will tear meat instead of cutting cleanly.
  3. Improper temperature and shape of frozen meat When temperature is too high, meat softens and deforms or sticks while cutting. Overly cold frozen meat is brittle and breaks into scraps. Irregular block shape or tough fascia inside raw materials also causes inconsistent cutting. Recommended raw material temperature: -12℃ ~ -18℃.
  4. Mechanical faults of equipment Worn bearings with enlarged clearances cause blade holder vibration. Insufficient pre-compression pressure allows meat blocks to shift during cutting, resulting in dimension deviation.

Solutions: Sharpen or replace blades regularly, calibrate grid gaps and tighten blade screws. Keep proper belt tension and feed flat blocks at constant speed. Control frozen meat temperature and pre-cut irregular large blocks. Maintain bearings and pre-pressure mechanism periodically.
